Famous Meatloaf
This recipe is originally from the Trim Healthy cookbook, and we loved it so much that we just had to share it! If you have a large family, you might want to consider doubling the recipe.
Ingredients
FOR THE LOAF:
1/2 large onion
Ground beef (enough for your family)
3 large eggs
2 teaspoons onion powder
2 teaspoons garlic powder
Salt and pepper to taste
3 tablespoons prepared yellow mustard
6 tablespoons tomato sauce
6 tablespoons chutney
3 tablespoons THM baking blend (or flour)
FOR THE TOPPING:
1/3 cup tomato sauce
2 tablespoons prepared yellow mustard
2-3 tablespoons erythritol or xylitol (or cane sugar)
Instructions
Preheat the oven to 180 degrees Celsius.
Make the loaf. Put the onion half in a food processor with 1 heaping cup of the ground beef. Process until the onion is completely broken down and absorbed by the meat (you may have to stop the processing to scrape down the sides with a spatula, then start again a couple of times).
Put the onion mix in a large bowl and combine with the remaining meat, the eggs, the seasonings, mustard, tomato sauce, chutney, and baking blend/flour. Thoroughly grease a baking dish. Put the meat mixture into it and bake in the oven for 45 minutes.
While the meatloaf is cooking in the oven, make the topping. Mix the tomato sauce, mustard and sweetener, and spread on top of the loaf. Bake for 10 more minutes. Broil for the last few minutes for a browned and bubbly topping. Serve and enjoy!
