Pesto Caprese Pasta

In our house, this is our Monday night dinner almost every single week! It is so absolutely delicious and ridiculously easy, making it a perfect dinner-in-a-hurry.

Ingredients

Pasta (as much as you would usually use for a meal)

1 cup cherry tomatoes (canned tomatoes are fine)

1-2 cups mozzarella cheese

1-2 jars basil pesto*

1/4 fresh basil (optional)

1 cup cream (optional)

1 can beans

Frozen vegetables (optional)

Cream cheese (to taste)

Salt and pepper to taste

Instructions

Bring a large pot of water to a boil, and add as much pasta as you want. When the pasta is cooked, drain off the extra water and set aside. 

Add the rest of the ingredients to the pot and toss to combine. You can add whatever you like and leave out whatever you like. You can also serve with parmesan cheese on the side. Serve warm.
