Stuffed Peppers (Capsicum)

We always have fond memories when we gather around for a meal of this special treat. The best part is that this is a very flexible and easy recipe, creating lots of room to explore with different spices and sauces until you find the one you like. As a result, we just want to let you know that what we have written in the ingredient are very flexible, and you can add and take away whatever you like. We usually take out the hot spices and add some tomato sauce and chutney when we make it. Make this recipe yours!

Ingredients

1 1/2 cups bone broth or chicken stock

3/4 cup quinoa

1 onion (diced)

2 cloves of garlic, minced, or just some dried garlic granules

1-2 packets of ground beef (depending on how large your family is)

2-4 red bell peppers (capsicum), halved and seeded

2 yellow bell peppers (capsicum), halved at seeded

1 can diced tomatoes

1 cup grated cheese

2 Tablespoons olive oil


 

1/2 teaspoon chilli powder (if you like hot food)

1 1/2 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (if you like hot food)


Salt and pepper to taste

Instructions

Preheat your oven to 200 degrees Celsius. Meanwhile, bring the stock and a pinch of salt to a boil in a small pot. Once boiling, add quinoa. Cover and cook on low heat for 15-20 minutes. Or, you can cook the quinoa however you normally would.

Arrange the capsicum halves on a baking sheet and drizzle with 1 Tablespoon olive oil. Sprinkle with salt and pepper. Then put it in the oven and bake until softened, about 7-10 minutes.

Meanwhile, heat 1 Tablespoon of olive oil (or oil of preference) in a large skillet over medium-high heat. Add onions and garlic and cook for 4-5 minutes, until softened. Add the ground beef and break up as it browns. Cook until the meat is thoroughly browned. Stir in the spices and toss to combine, letting it cook for another half a minute before adding the tomatoes. Let it simmer for a few minutes. Now, stir in the cooked quinoa and season with salt and pepper.

Fill the prepared capsicums with the beef mixture and sprinkle with cheese. Bake for 10 minutes, and then serve and enjoy!
